About Highlands . . .

You can find the traditional Highland lore (story) on most Web pages, but I am going to give you my version of it and the reasons they are the best beef anywhere.
I grew up with Hereford cattle. I like Herefords, but they have too many problems. I worked at a few different sale barns when I was younger, then later at a breeding facility. I became familiar with a lot of different breeds. I was initially impressed with what was out there. After my extensive work experience, I became less and less impressed. My interests matured toward a gentle, low-stress animal, an animal that was easy to handle.
Highlands are easy to handle and very low stress.
I first saw a pair of Highlands at an animal park where I was working. We had a few other breeds of cattle, but the Highlands looked the best under the same conditions: bare ground and rocks.
Highlands are a browsing type cow and do well where other cattle may not. Another advantage to the Highland breed is that they have low birth-weight calves that grow well. I didn't like pulling calves or having prolapsed cows.
Many breeds are prone to pink eye cow or cancer eye. Highlands have eye protection and are not susceptible to those conditions.
Highland beef is a fine grain beef and has a low sheer raiting. That means tender beef!
Highlands don't put on excess back fat or inside carcass fat. Highlands are lean. Highlands are mature when harvested, more are more flavorful at maturity.
Highlands are also long-lived animals, which means longer production in the herd.
Highlands have been a beef animal for a very long time. They were driven to market in England, where they were recognized as a desirable beef. They were never developed for draft purposes. Drovers were responsible for the driving of the cattle. I would like to thank them for breeding a gentle, easy-to- drive animal that moves from pasture to pasture with ease. I think to myself that the drovers must have eaten the rouge cattle because it is easy to work the Highland.
Highlands have horns for protection. Nowadays, with the influx of people and dogs in the country, you need to have a cow that can protect her calf. Three dogs running together have pack attitude and can destroy a herd. The Highlands can protect themselves.
Highlands are the oldest registered breed of cattle in the world. Highlands are the Queen's Beef of choice.
Highlands are Prime Beef.

At Post Oak Ranch, we pride ourselves on putting our clients first. We believe a happy customer will be a loyal customer.
